2011 Estate Syrah
Our 2011 Estate Syrah has a perfumed, elegant nose with hints of licorice, vanilla, black fruit, white pepper and mocha. The richness on the palate is pure and fresh with notes of luscious and generous black fruit, that evolves into a long and silky finish.
Hand harvesting began at 2am on September 29th and was completed about 11 am with sugars averaging 25 brix. About 3% Viognier was picked and added to the open top fermentors. The grapes were cold-soaked for three days. The must was then inoculated with Syrah yeast, the cap hand punched three times a day. Basket pressed between October 10th and 12th into 400 liter Taransaud French Oak where it aged for three years. The wine was bottled unfined and unfiltered on August 12, 2014 with a TA of 0.60. ph of 4.11 and an alcohol of 15%. We produced 440 cases of 750 ml bottles and 44 magnum bottles.
