2017 DCV Reserve Cabernet
This is our second release of Reserve Cabernet. This is an elegant Cabernet, which we blended with 5% of our estate Syrah. Our Cabernet was harvested on October 13, 2017 from the eastern hillside vineyard of Ray Teldeshi. Cold soaked for 72 hours, yeast innoculted on October 16, basket pressed on October 25 then aged for 23 months in new Taransaud French Oak. We added about 5% Syrah from our Brown Hill. This wine is decadent and inviting three act play, composed in perfect harmony between lovely red fruit, proud mouth feel and texture, and an undeniably persistent finish. Truly an expression of Dry Creek Cabernet Sauvignon at its finest. This Hermitaged Cabernet can be served with classic meats such as veal, pork, lamb duck, game and roasted chicken.
We bottled our 2017 Dry Creek valley Cabernet Sauvignon on September 11, 2019, The TA was 0.75, ph 3.51 and an alcohol of 14 1⁄2% by volume.
